Built to Evolve – Pure Dairy’s New World-Class Manufacturing Facility

With over 25 years’ experience in the dairy industry, I recently attended a course at the Centre for Dairy Research in Madison, WI. There, it yet again struck me how much potential there is for innovation and improvement in dairy. It’s just that visionary thinking is all too often frustrated by practical limitations. I’ve seen this many times when commissioning new production lines in various parts of the world.

That’s one of the many reasons I’m so inspired to now find myself working at Pure Dairy. Because what we’re creating here isn’t just something new—a benchmark for modern dairy. We’re creating the capability to realise future innovations, to pivot and keep growing as the world of dairy changes around us.

A place where visionary thinking isn’t frustrated but empowered.

This is embodied in Pure Dairy’s new, purpose-built cheese manufacturing and processing plant in Dandenong South. The sheer scale of this site is impressive. Our cool room will hold up to 4,000 pallets plus freezer space for another 500 and an additional boxing room with space for 300 more. It’s a serious operation, built to accommodate the growing needs of Pure Dairy’s client partners. With multiple loading bays and export capability, we’re setting ourselves up for intelligent, sustainable growth.

Every aspect of manufacturing, processing, storage and transport has been carefully considered. Trucks of any size come in one way and leave another, making for speedy logistics. Unloaded product stays chilled at 4º as it travels less than 5 metres to the chilled warehouse. Indeed, the entire factory operates at 4-9º. Combined with our state-of-the-art manufacturing equipment, this means that there are never any temperature spikes in the product, so we can keep our labels clear from unnecessary preservatives and emulsifiers.

Manufacturing and processing capabilities are equally impressive—all designed and constructed to world-class standards, with safety, quality, and efficiency front of mind. We’ve invested in the best equipment available on the market today. Everything we’re installing reflects the newest technology and innovations in dairy manufacturing, with a clear focus on quality, shelf life and reduced waste.

Safety and product quality are paramount. For example, our high-care area is fed over-pressurised filtered air from a dedicated brand-new HVAC system. Only designated high-care equipment is used here, and it never moves anywhere else. The floor is painted blue to clearly show any spills. And both the high- and low-care areas can safely be viewed by visitors from a glassed overhead walkway.

With the installation of three initial production lines, we’re kicking off with a state-of-the-art shred line, almost 50 metres long and with the capacity to produce a massive amount of shredded cheese every hour. This is supported by natural slice line and processed cheese capabilities as part of a fully integrated setup.

Everything is coming together to deliver high-quality cheese at scale. The result? Our foodservice customers and, in time, supermarket shoppers, will benefit from a more consistent product and a higher standard of cheese, produced right here in Australia.

While I love setting up lines and working with the latest machinery, I’m however even more passionate about people. A factory is only as strong as the team that runs it. I don’t believe in a single “superstar” carrying the load. Instead, I believe in building a team where every individual has the chance to excel. When people feel valued and empowered, the entire operation thrives.

That energy is already taking shape. Our HR team has been overwhelmed with applications, and I’ve been encouraged by the calibre of talent stepping forward. There’s a strong desire to be part of something fresh—an environment where quality and safety are non-negotiable, where efficiency is a given, and where there’s a genuine opportunity to influence how things are done from day one.

What excites me most is knowing that when we open the doors, every aspect of this facility—from layout to operational culture—will be built on a shared commitment to excellence. This is more than a factory. It’s a fresh start, a forward-thinking operation. A place where people and products will flourish.

We’re not just building a factory. We’re building a platform to evolve the dairy industry of tomorrow.
